Many of us these days are concerned and informed about the foods we eat. More and more of us are looking for natural, organic choices when we shop, and there is a wonderful little place in Haleiwa, on the North Shore of Oahu, that prides itself on having “the healthiest food on the North Shore”! Celestial Natural Foods has a great selection of organic produce and grains, lots of vegan choices, gluten-free products, a wide variety of natural, nutritional supplements, and a very helpful, courteous staff!
Another big plus at Celestial Market is their Beet Box Café at the rear of the store! Their organic, vegetarian menu has delicious options to the “fast food” we have grown accustomed to these days. There is even a lunchwagon, located across from Pipeline, where you can stop for a healty bite when you are out enjoying the day on the North Shore! The Beet Box lunchwagon is open Saturday – Wednesday from 11 to 5 for breakfast and lunch.

VEGAN MINT CHOCOLATE CHIP COOKIES 25 min prep / 15 min cook / 8 large cookies
2 C Spelt flour
1 C Vegan chocolate chips
1 C Walnuts, chopped
¾ C Rolled oats
½ tsp Sea salt
¾ tsp Baking soda
1/8 tsp Cinnamon powder
2/3 C Maple syrup
2/3 C Safflower oil
2 Tbl Filtered water
1 tsp Peppermint extract
1. Preheat oven to 350°. Place Dry ingredients in a large mixing bowl and mix well. Combine Wet ingredients in another large bowl. Add wet to dry and mix well. Refrigerate for 15 minutes. Place 8 scoops on a well oiled or parchment paper-lined baking sheet and flatten slightly with hand. Space evenly so cookies have room to spread.
2. Bake until golden brown, approximately 10 minutes. Allow to cool before enjoying.
