Good Grilling Recipes for your Fourth of July BarBQ!

During the week of Fourth of July, many of you here on Oahu, whether visitor or resident, may be getting together with family and friends for some good food and fun! Lots of times this means grilling on the BarBQ! If you are looking for some new recipes, we have some you might like to try…

  • Hawaiian Chicken Kabobs… you will need 1 ½ lbs boneless chicken breasts, one 15 oz can unsweetened pineapple chunks, 1-2 green bell peppers (also cubed), 12 mushrooms, 12-18 cherry tomatoes, 1/2c soy sauce, 1/4c veg oil, 1tblsp brown sugar, 1 tsp garlic powder, 2tsp ground ginger, and 1tsp dry mustard…and skewer or kabob sticks

Prepare the marinade by draining juice off pineapple and mixing it with the last 6 ingredients listed then heating over med heat for approx. 5 minutes….cut chicken into cubes…pour marinade over chicken and chill for one hour…after marinade is chilled prepare kabobs by alternating chicken, pineapple, mushrooms, peppers, and tomatoes ….reserve marinade and use for basting kabobs….grill on BarBQ

  • BarBQ Potatoes….you will need some foil wrap and 2 lbs med red potatoes, quartered, 2 tblsp butter, 1 tblsp chili powder, 1 tsp honey, ¼ tsp garlic powder, ¼ tsp pepper, salt to taste

Mix last 6 ingredients in bowl, add cut up potatoes and toss to coat, place in foil wrap, seal, and grill for 30 min

  • Grilled Fish (salmon or saltwater fish such as ono or mahi)…you will need 1 ½ lbs fish fillets, and for the basting sauce 1 tsp ginger, 1 tsp garlic powder, 1/3 c soy sauce, 1/3 c orange juice, ¼ c honey, and 1 green onion chopped

Mix basting sauce ingredients in bowl, reserving green onion for later, and use this to brush on fish as you grill, being sure not to overcook fish (10 min to a side is usually good)….use green onion as garnish
